Strawberry cashew puff bites. How amazing does that not sound? Sweet cashewbuttery (is that even a word?) snack balls made with cashewbutter, strawberry jam, puffed quinoa and amaranth.
These bite sized treats are filled with healthy fats from the cashewbutter and chopped cashews. (If you don’t like cashews, you can switch them out with any other nuts and nutbutters) I will definitely be bringing some with me to school. The best part? They only take 15 minutes to make!
STRAWBERRY CASHEW PUFF BITES
- 15g puffed quinoa
- 15g puffed amaranth*
- 60g cashewbutter
- 20g cashews (chopped)
- 2 tbs strawberry jam
- Optional: 1 tbs syrup
- 3 squares chocolate
DIRECTIONS:
- In a large bowl mix all ingredients together, except chocolate, with a wooden spoon or use your hands
- Roll the mixture into bite sized balls. I made 10
- Melt the chocolate in a saucepan and pour it over the balls
- Optional: sprinkle with some puffed amarant, desiccated coconut or chopped cashews
- Let them chill in the fridge for 1 hour before enjoying

*if you dont have puffed amaranth just use 30g of puffed quinoa
