PBJ energy balls

I can’t be the only one who loves pbj, right? The combination of peanutbutter and jelly is a classic, and in my book sooo good! I have made some delicious, nutritious and of course easy energy balls! I brought some with me to school this week, and they were perfect for snacking in between classes.

They do contain a “special ingredient”, but it’s really worth buying. It’s….. freeze dried strawberry powder. And the great thing is you can use it for so many things. I have used it in a delicious fig spread, smoothies and chia seed pudding. And of course (probably my fave) these pbj balls.

PBJ ENERGY BALLS

PEANUTBUTTER BALL INGREDIENTS:

  • 50g salted peanuts
  • 75g pitted dates
  • 1 tbs peanutbutter

DIRECTIONS:

  • add all the ingredients to a blender and blend until sticky and well-combined.
  • roll into 13 small balls.
  • set aside while you make the jelly ball

JELLY BALL INGREDIENTS:

  • 50g almonds
  • 75g pitted dates
  • 1 tbs + 1 tsp strawberry powder

DIRECTIONS:

  • add all the ingredients to a blender and blend until sticky and well-combined
  • roll into 13 small balls
  • now take 1 peanutbutter ball and 1 jelly ball and roll them together
  • repeat for the remaining balls

NUTRITION:

85 calories per ball
