Pitabread With Paprika Roasted Chickpeas & Tzatziki

Craving a delicious and fast lunch or dinner? These pitas are for you! They require few ingredients and are simple to make. Ideal for when you don’t feel like cooking.

The crunchy paprika roasted chickpeas goes so well with the tzatziki. It’s such a good combination! What’s not to love?

PITABREAD WITH PAPRIKA ROASTED CHICKPEAS AND TZATZIKI

INGREDIENTS:

  • 1 can chickpeas (240g) drained and rinsed
  • 1 tsp oil
  • 1 tbs chili powder
  • 1 tbs paprika
  • 1 tsp salt
  • 1 tsp lemon juice

DIRECTIONS:

  • add the ingredients to a bowl
  • mix together so the spices are covering the chickpeas
  • bake them in the oven, on a bakingtray lined with parchmentpaper, for 30 minutes on 200c

TZATZIKI:

  • 200g vegan greek yoghurt
  • 135g cucumber
  • 1 tsp salt
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • Fresh mint and dill

DIRECTIONS:

  • shred the cucumber. Put it in a bowl with 1 tsp salt
  • incorporate the salt into the cucumber with your hands
  • let it sit for 15 minutes
  • with your hands, press the liquid out of the cucumber and transfer it to a bowl together with the greek yoghurt
  • add in the remaining ingredients and mix well

EXTRAS:

2 bell peppers sliced and baked in the oven for 25 minutes on 200c
Shredded lettuce
Sweetcorn
Sliced olives
Pita bread
