Coconut Pineapple Dhal

I know it’s quite controversial with pineapple in savoury dishes, but I have to admit… I love it 😂🍍 I thought it would go nicely in a creamy coconut dhal. And it did! It’s a proteinpacked meal and very filling and satisfying! Perfect 😃 It goes well with rice, quinoa, naan bread or even on it’s own. You can of course omit the pineapple if you’re not into that kind of stuff😂

PINEAPPLE AND COCONUT DHAL
INGREDIENTS ENGLISH:

  • 3 potatoes (chopped)
  • 1 medium carrot (chopped)
  • 1 onion (finely chopped)
  • 1 minced garlic
  • 200g red lentils
  • 2 tbs curry powder
  • 2 tbs paprika
  • 1 tbs garam masala
  • 1/2 vegetable boullion cube
  • 1 can chopped tomatoes
  • 2 dl fullfat coconutmilk
  • 1 dl water
  • 140g canned pineapple (save some of the juice)

DIRECTIONS:

  • Sauté onion and garlic in a saucepan until translucent.
  • Add lentils, tomatoes, water, coconutmilk, some pineapple juice, carrot, potatoes & boullioncube to the saucepan.
  • Simmer for 20 minutes.
  • Add in pineapple chunks, garam masala, paprika and curry powder
  • Serve with rice or quinoa

Optional: top with fresh koriander and peanuts

INGREDIENSER DANSK:

  • 3 kartofler (skåret i mindre stykker)
  • 1 gulerod (skåret i mindre stykker)
  • 1 løg (skåret i tern)
  • 1 fed hvidløg (presset)
  • 200g røde linser
  • 1 dåse hakkede tomater
  • 2 dl fed kokosmælk
  • 1 dl vand
  • 1/2 grøntsagsbouillonterning
  • 2 spsk karry
  • 2 spsk paprika
  • 1 spsk garam masala
  • 140g ananas fra dåse (gem lidt saft fra dåsen)

FREMGANGSMÅDE:

  • Steg løg og hvidløg på en pande indtil gyldenbrune.
  • Tilføj linser, tomater, kartofler, gulerod, vand, boullionterning, kokosmælk og lidt ananas saft.
  • Lad det simre i 20 minutter.
  • Tilføj ananas og krydderierne.
  • Server med ris eller quinoa.
  • Top med koriander og peanuts.
