Cheesy Roasted Bell Pepper & Jalapeno Spaghetti

I’ve been wanting to make a cheesy spaghetti dish in ages and now it’s finally here 👏🏼 It’s creamy and cheesy but completely vegan 🌱 Nutritional yeast is a must in this recipe! To add a bit of extra kick I added some jalapenos. I think they go very well in this dish but if you don’t like heat definitely omit this step 🔥 All types of pasta can be used in this recipe I just think spaghetti is great ‘cause you can twirl it on your fork 🙈

INGREDIENTS: English

  • 1 red bell pepper
  • 1 onion
  • 1 dl + 1 tbs soy milk
  • 4 tbs jalapenos (from a jar) (optional)
  • 4 tbs nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • 1/2 tsp cornstarch
  • Salt & pepper
  • 100g mushrooms
  • 75g spinach
  • 10 cherry tomatoes
  • 150g spaghetti (uncooked)

DIRECTIONS:

  • Cut the bell pepper in half, remove the seeds and roast it in the oven at 200c for 30 minutes
  • Remove the skin from the the bell pepper, when it has cooled down a bit
  • While the bell pepper is roasting, chop onion finely and sautée on a pan
  • Chop mushrooms and sautée with the spinach on a separate pan
  • Cook spaghetti and roast the tomatoes
  • Add bell pepper, jalapeno, soy milk, nutritional yeast, onion, salt, pepper, garlic powder, lemon juice, cornstarch to a food processor
  • Pulse/blend til no clumps remain
  • Add sauce to saucepan with the cooked spaghetti, sautéed spinach, mushroom and roasted tomatoes
  • Serve on a plate and top with extra nutritional yeast (optional)

INGREDIENSER: Dansk

  • 1 rød peberfrugt
  • 1 løg
  • 1 dl + 1 spsk soja mælk
  • 4 spsk jalapenos (fra glas) (valgfrit)
  • 4 spsk gærflager
  • 1 tsk hvidløgspulver
  • 1 tsk citronsaft
  • 1/2 tsk majsstivelse
  • Salt & peber
  • 100g champignon
  • 75g spinat
  • 10 cherry tomater
  • 150g spaghetti (rå)

FREMGANGSMÅDE:

  • Skær peberfrugten i halv, fjern kernerne og bag den i ovnen ved 200c i 30 minutter
  • Tag skindet af peberfrugten, når den er kølet af
  • Imens peberfrugten er i ovnen, hakkes løget og steges på en pande
  • Hak champignonerne og steg dem i en separat pande med spinaten
  • Kog spaghettien og bag tomaterne i ovnen
  • Tilføj peberfrugten, jalapenos, sojamælk, gærflager, løget, salt, peber, hvidløgspulver, citronsaft og majsstivelse til en foodprocessor
  • Puls/blend til der ikke er nogen klumper tilbage
  • Kom sovsen på en pande sammen med spaghettien, spinaten, champignonerne og de ovnbagte tomater
  • Serveres evt med lidt gærflager drysset oven på
