Blueberry Nicecream With Chia Pudding

In the summer heat, my favourite thing to eat is nicecream 🍌 It’s so fresh, creamy and light! It reminds me of traditional soft serve ice cream except healthy 😍 and of course very tasty! To make the nicecream a bit more interesting and filling I created this sort of nicecream and chia pudding parfait. And it turned out wonderful😃 Blueberries are one of my fave berries so I made this parfait totally blueberry themed 😋 If you prefer another berry, feel free to use those instead!

BLUEBERRY NICECREAM WITH CHIA PUDDING: English

INGREDIENTS:

  • Two frozen bananas
  • 2 dl frozen blueberries
  • 1 bag (24g) blueberries crunch from Vita Snack (dried blueberries will work too)
  • 3 tbs chia seeds
  • 1 dl unsweetened almond milk
  • 1 tbs agave syrup
  • Coconut flakes
  • Fresh berries

INSTRUCTIONS:

  • Peel the bananas and freeze them in a freezer-friendly box overnight.
  • Add chia seeds to a glass with the almond milk and agave syrup.
  • Mix well.
  • Let it sit in the fridge overnight.
  • Add the chia pudding to two glasses,
  • Take the bananas out of the freezer.
  • Let them thaw 10 minutes.
  • Add banana and frozen blueberries to a blender or food processor.
  • Blitz till a creamy consistency is reached.
  • Add blueberries crunch to the blender/food processor and pulse a few times
  • Add the nicecream to the glasses as well.
  • Top with coconut flakes and fresh berries.

BLÅBÆR NICECREAM MED CHIABUDDING: Dansk

INGREDIENSER

  • To frosne bananer
  • 2 dl frosne blåbær
  • 1 pose (24g) blueberries crunch fra Vita Snack (tørrede blåbær er også fine at bruge)
  • 3 spsk chiafrø
  • 1 dl sukkerfri mandelmælk
  • 1 spsk agavesirup
  • Kokosflager
  • Friske bær

FREMGANGSMÅDE

  • Tag skrællen af to bananer og kom dem i en fryservenlig beholder.
  • Frys dem natten over.
  • Kom chiafrø i et glas med mandelmælk og agavesirup og rør godt rundt.
  • Lad det stå i køleskabet natten over.
  • Kom chiabuddingen i to glas.
  • Derefter tages bananerne ud af fryseren.
  • Lad dem ligge 10 minutter.
  • Kom bananerne og de frosne blåbær i en blender eller foodprocessor.
  • Blend til en cremet konsistens opnås.
  • Kom blueberries crunch i blenderen/foodprocessoren og puls et par gange.
  • Kom også dette i de to glas.
  • Top med kokosflager og friske bær.
