Vegan Katsu Curry

Back at it again with another delicious recipe! This time I’ve created this tasty vegan katsu curry 😍 It’s has a nice kick to it without being too spicy 😋 It’s just perfect! Paired with a vegan schnitzel, rice and salad it makes for a great meal 👏🏼 I’m sure this dish will impress your family and friends😉
It’s quick to make (I would say under 30 minutes) and it’s quite easy to prepare as well! Let me know if you try it out. Happy cooking 🍛

 

Katsu curry4.1

VEGAN KATSU CURRY: English

INGREDIENTS: serves 2

  • 2 medium organic carrots
  • 1 bell pepper
  • 1 red onion
  • 1/2 banana
  • 1 tbs + 1 tsp tomato purée
  • Juice from 1/2 lemon
  • 1 tbs garam masala
  • 1 tbs soy sauce
  • 1 tsp ginger powder
  • 1 tsp garlic powder
  • 3 dl water
  • 1/2 vegetable bouillon cube
  • 1 tsp cornstarch + 3 tsp water

METHOD:

  • Start by chopping carrots, bell pepper and onion into smaller pieces.
  • Fry them for 5 minutes in a large saucepan.
  • Add 3 dl water, bouillon cube, tomato purée, lemon juice, spices and soy sauce to the saucepan.
  • Let it simmer 5 minutes.
  • Chop banana and add to the saucepan.
  • Simmer another 5 minutes.
  • Mix cornstarch and water in a small bowl.
  • Add the cornstarch mixture to the saucepan and simmer another 2 minutes.
  • Adjust seasonings to taste.
  • Serve with vegan schnitzel, rice and salad of choice.

VEGANSK KATSU CURRY: Dansk

INGREDIENSER: 2 portioner

  • 2 mellemstore økologiske gulerødder
  • 1 peberfrugt
  • 1 rødløg
  • 1/2 banan
  • 1 spsk + 1 tsk tomatpuré
  • Saften fra 1/2 citron
  • 1 spsk garam masala
  • 1 spsk soyasovs
  • 1 tsk ingefærspulver
  • 1 tsk hvidløgspulver
  • 3 dl vand
  • 1/2 grøntsagsbouillonterning
  • 1 tsk majsstivelse + 3 spsk vand

FREMGANGSMÅDE:

  • Skær gulerødder, peberfrugt og løg i mindre stykker.
  • Steg dem i en stor pande eller gryde i ca. 5 minutter.
  • Kom 3 dl vand, bouillonterningen, tomatpuré, citron saft, krydderierne og soyasovs i gryden.
  • Lad det simre i 5 minutter.
  • Skær bananen i mindre stykker og tilføj den til gryden.
  • Lad det simre i yderligere 5 minutter.
  • Miks majsstivelse og vand i en lille skål.
  • Tilføj det til gryden og lad det simre i 2 minutter.
  • Server med veganske schnitzler, ris og salat.
