Lentil Bolognese

As the weather is starting to get cooler I’m starting to crave more comforting and hearty meals! A lentil bolognese came to mind and it turned out absolutely delicious 😋 The lentils add such a nice texture and pack a bunch of protein too! Win-win! I chose to serve my bolognese with whole wheat spaghetti but any spaghetti will work 🍝 To finish I sprinkled some nutritional yeast on top but that’s totally optional. It does add a delicious cheesy flavour though so I would highly recommend 😀 This dish is a perfect meal to serve for family and friends 👍🏼 Give it a go

  • 1 red onion
  • 3 garlic cloves
  • 150g mushrooms
  • 1 courgette/zucchini
  • 1 carrot
  • 3 tbs tomatopurée
  • 2 cans chopped tomatoes (2x400g)
  • A handful chopped olives and sun-dried tomatoes (chopped in smaller pieces)
  • 2 dl red lentils
  • 6 dl water
  • 1 vegetable bouillon cube
  • 2 tbs dried oregano
  • 2 tbs dried basil
  • 1 tbs paprika powder
  • Salt & pepper to taste
  • 1 tbs coconut oil
  • Nutritional yeast (optional)


  • Chop onion finely
  • Add to a pot with coconut oil and sautée
  • Add crushed garlic
  • Chop mushrooms and courgette finely
  • Add them to the pot
  • Grate the carrot and add it to the pot along with tomatopurée, chopped tomatoes, a handful chopped olives and sun-dried tomatoes, lentils, water and bouillon cube
  • Give it a good stir and add the spices
  • Let it simmer for 30 minutes
  • Season with salt and pepper
  • Cook spaghetti al denté
  • Plate your spaghetti and bolognese on a plate
  • Top with nutritional yeast


  • 1 rødløg
  • 3 fede hvidløg
  • 150g champignoner
  • 1 squash/zucchini
  • 1 gulerod
  • 3 spsk tomatopuré
  • 2 dåser hakkede tomater (2x400g)
  • Én håndfuld oliven og soltørrede tomater (skåret i mindre stykker)
  • 2 dl røde linser
  • 6 dl vand
  • 1 grøntsagsbouillonterning
  • 2 spsk tørret oregano
  • 2 spsk tørret basilikum
  • 1 spsk paprika
  • Salt & peber
  • 1 spsk kokosolie
  • Gærflager (valgfrit)


  • Hak løg fint
  • Kom det i en gryde med kokosolie
  • Tilføj knust hvidløg
  • Hak champignon og squash i mindre stykker
  • Tilføj det til gryden
  • Riv gulerødden og kom det i gryden sammen med tomatopuré, hakkede tomater, oliven og soltørrede tomater, linser, vand og bouillonterning
  • Rør godt rundt og tilføj krydderierne
  • Lad det små simre i 30 minutter
  • Smag til med salt og peber
  • Kog spaghetti
  • Anret spaghetti og bolognese på en tallerken
  • Top med gærflager
