Carrot Cake Overnight Oats

It’s Monday and another busy week has started!😅 I have created a perfect meal-prep breakfast for the busy mornings! Carrot cake overnight oats😍🥕 These overnight oats taste divine. Sweet, cinnamony and full of shredded carrots so this breakfast is actually healthy too!👏🏼 The oats are full of fibre and keep you full the whole morning! I added crushed walnuts and cacao nibs for some crunch and some raisins for some extra natural sweetness🧡 These keep in the fridge for 4 days.

Carrot cake overnight oats

INGREDIENTS: English

Serves 1

  • 70g oats
  • 1 medium-sized carrot
  • 1 tbs chia seeds
  • 1 tbs sweetener
  • 1/2 tsp cinnamon
  • 1/8 tsp ginger powder
  • 2 tbs crushed walnuts
  • 1 tbs raisins
  • 1 tsp cacao nibs
  • 2 dl vanilla rice milk (or use any plant-based milk and add a few drops of vanilla extract)
  • 1 tbs nut butter

METHOD:

  • Start by grating the carrot
  • Combine all ingredients except nut butter in a jar.
  • Mix well.
  • Let it sit in the fridge overnight.
  • Serve with 1 tbs of nut butter.

INGREDIENSER: Dansk

1 portion

  • 70g havregryn
  • 1 mellem stor gulerod
  • 1 spsk chiafrø
  • 1 spsk sødemiddel
  • 1/2 tsk kanel
  • 1/8 tsk ingefærspulver
  • 2 spsk hakkede valnødder
  • 1 spsk rosiner
  • 1 tsk kakaokerner
  • 2 dl vanilje rismælk (eller brug en hvilken som helst anden plantemælk og tilføj et par dråber vanilje ekstrakt)
  • 1 spsk nøddesmør

METHOD:

  • Start med at rive guleroden på et rivejern.
  • Kom alle ingredienserne i en skål undtagen nøddesmøret.
  • Rør godt rundt.
  • Lad det stå i køleskabet natten over.
  • Server med 1 spsk nøddesmør
