Fresh Pea Soup With Salted Almonds

It’s beginning to feel a lot like autumn now. The rainy days and cold winds🌧 Nothing beats a warming soup on those days😍 What about a delicious pea soup with salted almonds? The combination of the two is SO GOOD! I actually got the inspiration to this green pea soup from my porridge. I know. My porridge 😂 I always add some kind of greens powder to my porridge and then one day my dad asked me if I was making some kind of soup… Nope, this is my porridge 😂 Then it hit me. I have to make some kind of green soup. And I came up with this delicious goodness of a bowl🙌🏼 Try it! On a rainy day when you need some good comfort food!😋

FRESH PEA SOUP WITH SALTED ALMONDS: English version

INGREDIENTS: Serves 2

  • 1 tbs oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 3 small, peeled potatoes
  • 2 cloves garlic, minced
  • 1 handful chopped fresh mint, parsley or coriander
  • 4 dl peas, fresh or frozen
  • 2,5 dl water
  • 1/2 vegetable bouillon cube
  • Salt, pepper and lemon juice to taste

METHOD:

  • Heat oil in a pot over medium heat.
  • Add onion, potatoes and celery.
  • Cook approx 5 minutes.
  • Add minced garlic and cook for another minute.
  • Add in the potatoes, water and bouillon cube.
  • Bring to a boil, turn down the heat and let it simmer for 12-15 minutes.
  • Add in the peas and simmer another minute or two.
  • Add the fresh herbs to the pot.
  • Let the soup cool a little.
  • Puree the soup in a blender/food processor or with a hand blender.
  • Add salt, pepper and lemon juice to taste.
  • Reheat in the pot.
  • Serve with salted almonds and optional soy yoghurt.

SALTED ALMONDS

INGREDIENTS:

  • 100g almonds
  • Boiling water (enough to cover the almonds)
  • 2 tbs salt

METHOD:

  • Add boiling water along with the salt to a bowl or saucepan.
  • Mix well and add the almonds.
  • Let it sit for 25 minutes before draining.
  • Place the drained almonds on a baking tray lined with parchment paper.
  • Sprinkle with a little more salt.
  • Bake in a preheated oven for 18-20 minutes at 150c.

FRISK ÆRTESUPPE MED SALTEDE MANDLER: Dansk version

INGREDIENSER: 2 portioner

  • 1 spsk oile
  • 1 mellemstort løg, hakket
  • 2 stængler selleri, hakket
  • 3 små, skrællede kartofler
  • 2 fede hvidløg, knust
  • 1 håndful hakket frisk mynte, persille eller koriander
  • 4 dl ærter, friske eller frosne
  • 2,5 dl vand
  • 1/2 grøntsagsbouillonterning
  • Salt, peber og citronsaft

FREMGANGSMÅDE:

  • Varm oliem i en gryde.
  • Tilføj løg, kartofler og selleri.
  • Steg i ca. 5 minutter.
  • Tilføj knust hvidløg og steg ét minut mere.
  • Tilføj kartofler, vand og bouillonterning.
  • Lad det koge, skru ned for varmen og lad det simre i 12-15 minutter.
  • Tilføj ærterne og lad det simre i ét eller to minutter mere.
  • Tilføj de friske krydderurter til gryden.
  • Lad suppen køle lidt af.
  • Blend suppen i en blender/food processor eller med en stavblender.
  • Smag til med salt, peber og citronsaft.
  • Genvarm suppen i gryden
  • Server med saltede mandler og evt lidt sojayoghurt.

SALTEDE MANDLER

INGREDIENSER:

  • 100g mandler
  • Kogende vand (nok til at dække mandlerne)
  • 2 spsk salt

FREMGANGSMÅDE:

  • Kom kogende vand i en skål eller gryde sammen med saltet.
  • Rør rundt og tilføj mandlerne.
  • Lad det sidde i 25 minutter, før vandet hældes fra.
  • Læg mandlerne på en bageplade belagt med bagepapir.
  • Drys med lidt mere salt.
  • Bag i en forvarmet ovn i 18-20 minutter ved 150c.
