Fiery Ginger Nut Biscuits

I love ginger nuts so I thought I would try and make some myself. Wow! They turned out just perfect 😍 I would say even better because I love the added candied ginger. Yum!😋 I’m a ginger lover and if you are too you are going to love these! These biscuits are a little fiery, sweet and are perfectly crunchy 🍪🔥 A perfect snack especially around Christmas time!🎄

GINGER BISCUITS: English version

INGREDIENTS:

  • 150g white plain flour
  • 50g brown sugar
  • 25g white sugar
  • 60g maple syrup
  • 55g vegan butter
  • 1 tsp ginger powder
  • 1/2 tsp cinnamon powder
  • 1/4 tsp cloves powder
  • 1/4 tsp vanilla sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp water (optional)
  • Candied ginger (optional)

METHOD:

  • Preheat the oven to 180c.
  • In a large mixing bowl add flour, baking powder, baking soda, ginger, cinnamon, cloves and vanilla sugar.
  • Mix well.
  • Crumble butter into the dough.
  • Add the sugars and mix well to combine.
  • There should be no lumps.
  • Lastly add the maple syrup and knead the dough a little.
  • If the dough is too dry add 1 tsp water.
  • Cut candied ginger in smaller pieces and add them to the dough.
  • Line a baking tray with parchment paper.
  • Add 10-12 dough balls to the baking tray.
  • Flatten them a little.
  • Bake in the oven for 16-18 minutes at 180c.
  • Let cool before enjoying

INGEFÆRKIKS:

INGREDIENSER:

  • 150g hvedemel
  • 50g brun farin
  • 25g hvid sukker
  • 60g ahornssirup
  • 55g vegansk smør
  • 1 tsk ingefærspulver
  • 1/2 tsk stødt kanel
  • 1/4 tsk stødt nelliker
  • 1/4 tsk vanilje sukker
  • 1 tsk bagepulver
  • 1/4 tsk natron
  • 1 tsk vand
  • Kandiseret ingefær (valgfrit)

METHOD:

  • Forvarm din ovn til 180c.
  • Kom mel, bagepulver, natron, ingefær, kanel, nelliker og vanilje sukker i en stor skål.
  • Rør godt rundt.
  • Smulder smøren ind i dejen.
  • Tilføj sukkeret og rør godt rundt indtil der ikke er nogen klumper tilbage.
  • Tilsidst tilføjes siruppen og dejen æltes en lille smule.
  • Hvis dejen er for tør, tilføjes 1 tsk vand.
  • Skær ingefæren i mindre stykker og kom dem i dejen.
  • Kom bagepapir på en bageplade.
  • Tilføj ca. 10-12 dejkugler til bagepladen.
  • Pres dem flade.
  • Bag dem i ovnen i ca. 16-18 minutes ved 180c.
  • Lad kiksene køle af før de nydes.
