Stollen Cake Bites

One of the best things about Christmas time is all the cakes and bakes🎄🍪 One of my favourite cakes, which is a very popular treat in Germany at Christmas time, is stollen 😍 Filled with nuts, dried fruits and marzipan! It’s a wonderful, tasty and festive combination✨ Stollen can be a bit messy to eat since it’s covered in powdered sugar so I made mini versions of it. A perfect little treat in the cold afternoons with a cup of tea🍵

STOLLEN CAKE BITES: English version

INGREDIENTS:

  • 75g plant milk
  • 1 tbs active dry yeast
  • 250g all-purpose flour
  • 50g + 1 tbs plant-based butter
  • 100g plant-based yoghurt
  • 75g sugar
  • 50g chopped nuts (almonds, hazelnuts etc)
  • 50g dried fruits (raisins, cranberries, oranges etc)
  • 1 tbs cinnamon
  • 1/2 tsp each of ginger, cloves and nutmeg
  • 1/2 tsp rum aroma
  • 100-150g marzipan
  • Powdered sugar

METHOD:

  • Start by warming the milk in a small saucepan and add the yeast.
  • Mix flour, sugar and spices in a bowl.
  • Add the milk, 50g butter, yoghurt and rum aroma to the bowl.
  • Add the nuts and fruit to the bowl as well.
  • Knead the dough for approx. 5 minutes.
  • Cover and let rest in a warm place for 30 minutes.
  • Turn the dough out onto a lightly floured surface.
  • Roll the dough out to a flat rectangle about 1/2 cm thick.
  • Cut the dough into 4 equally sized pieces.
  • Divide the marzipan into 4 pieces.
  • Roll each piece of marzipan to a log with the length of the dough pieces (1cm in diameter)
  • Add the marzipan to the dough and roll the dough over the marzipan.
  • Cut into 5 pieces and place on a baking tray lined with parchment paper.
  • Bake in a preheated oven at 180c for 30 minutes.
  • Take the stollen bites out of the oven, melt 1 tbs butter and pour some over each bite.
  • Generously sprinkle each bite with powdered sugar.

STOLLEN CAKE BITES: Dansk version

INGREDIENSER:

  • 75g plantemælk
  • 1 spsk tørgær
  • 250g hvedemel
  • 50g + 1 spsk plantesmør
  • 100g planteyoghurt
  • 75g sukker
  • 50g hakkede nødder (mandler, hasselnødder mm)
  • 50g tørret frugt (rosiner, tranebær, appelsin mm)
  • 1 spsk kanel
  • 1/2 tsk hver af ingefær, nelliker og muskatnød
  • 1/2 tsk rom aroma
  • 100-150g marcipan
  • Flormelis

FREMGANGSMÅDE:

  • Lun mælken i en gryde og tilføj gæren.
  • Bland mel, sukker og krydderier i en skål.
  • Kom mælken, 50g smør, yoghurt og rom aroma i skålen.
  • Tilføj også nødderne og de tørrede frugter.
  • Ælt dejen i ca. 5 minutter.
  • Lad den stå et lunt sted i 30 minutter.
  • Rul dejen ud til en firkant ca 1/2 cm tyk.
  • Skær den i fire stykker på langs.
  • Del marcipanen i fire stykker og rul dem ca 1 cm i diameter.
  • Kom marcipanen på hver af de fire dej strimler.
  • Rul dejen omkring marcipanen.
  • Skær ud i ca. 5 stykker.
  • Læg dem på en bageplade beklædt med bagepapir.
  • Bag i ovnen i ca. 30 minutter ved 180c.
  • Tag pladen ud af ovnen og smelt 1 spsk smør.
  • Hæld smørren over bidderne og drys med rigeligt flormelis.
