Breakfast Cookies – Three Ways

I’m finally back with a new recipe! It’s been a while but I’m sure these breakfast cookies will make up for it😍 These cookies take no more than 15 minutes from start to finish! So easy and quick. They don’t require many ingredients either🙌🏼 They are packed full of flavour and healthy goodness😋 These cookies are a perfect breakfast and can be made three different ways for some variation. They are great on the go but they can, of course, be enjoyed whenever you fancy something sweet! I hope you give them a try!

BREAKFAST COOKIES: English version

BASIC COOKIE:

  • 1 ripe banana (100g)
  • 70g rolled oats

BANANA BREAD:

  • 20g dark chocolate (chopped)
  • 2 tbs walnuts

CHOCO COCO:

  • 1 tbs cacao powder
  • 1 tbs desiccated coconut

CARROT CAKE:

  • 1 small grated carrot (30g)
  • 2 tbs raisins
  • 1 tsp cinnamon powder

METHOD:

  • Mash the banana and add it to a bowl along with the oats.
  • Add the ingredients from the chosen cookie variation and mix well to combine.
  • Make six cookies and put them on a baking tray lined with parchment paper.
  • Bake in the oven for eight minutes at 180c.
  • Can be frozen for later use.

MORGENMADS COOKIES: Danish version

BASIS COOKIE:

  • 1 moden banan (100g)
  • 70g grovvalsede havregryn

BANANBRØD:

  • 20g mørk chokolade (hakket)
  • 2 spsk hakkede valnødder

CHOKO KOKOS:

  • 1 spsk kakaopulver
  • 1 spsk revet kokos

GULERØDSKAGE:

  • 1 lille revet gulerod (30g)
  • 2 spsk rosiner
  • 1 tsk stødt kanel

FREMGANGSMÅDE

  • Mos bananen og kom den i en skål sammen med havregrynene.
  • Tilføj de ekstra ingredienser fra den valgte cookie variation.
  • Rør det hele godt sammen.
  • Form seks cookies og læg dem på en bageplade beklædt med bagepapir.
  • Bag dem i ovnen i ca. otte minutter ved 180c.
  • Kan fryses ned til senere brug.
