Colourful Pasta Salad

Pasta salad is truly one of my favourite pasta dishes; if not my favourite 😍 It makes as a good side dish but it works great as the main dish as well! This recipe is as easy as pie. Boiling pasta and chopping vegetables are all it takes. Well, almost 😉 This pasta salad recipe is perfect in spring and summer☀️ It’s creamy, healthy and very tasty😋 Give it a go! It’ll take less than 30 minutes🙌🏼

Ingredients: English version

  • 500g pasta of choice
  • 400g plain soy yoghurt
  • 1 tbs lemon/lime juice
  • 1 tsp sugar
  • Salt to taste

Add-ins:

  • 125g bell pepper
  • 125g cucumber
  • 125g tomatoes
  • 1 can sweetcorn
  • 1 can black beans
  • Chives and spring onion (chopped)

Method:

  • Start by boiling the pasta.
  • Let the pasta cool while preparing the add-ins.
  • Cut pepper, cucumber and tomatoes into bite-size pieces.
  • Drain the sweet corn and black beans.
  • Add the pasta to a large mixing bowl along with all the other ingredients.
  • Stir well to combine and serve

Ingredienser: Dansk version

  • 500g pasta af eget valg
  • 400g neutral soja yoghurt
  • 1 tbs citron/lime juice
  • 1 tsp sukker
  • Salt

Tilføjelser:

  • 125g peberfrugt
  • 125g agurk
  • 125g tomater
  • 1 dåse majs
  • 1 dåse sorte
  • Purløg og forårsløg (hakkede)

Fremgangsmåde:

  • Start med at koge pastaen.
  • Lad pastaen køle af mens de resterende ingredineser forberedes.
  • Skær peberfrugt, agurk og tomater i mindre stykker.
  • Dræn majs og de sorte bønne.
  • Kom pastaen i en stor skål og tilføj alle de andre ingredienser.
  • Smag til med salt.
  • Rør godt rundt og server
